Città medievale, che ne conserva ancora i tratti identificativi dell'epoca, anche se le sue origini sono ben antecedenti e risalenti al periodo romanico del II secolo a.c. Si presume fosse un centro fortificato (oppidum) che serviva come base per le legioni. Altrettanto rilevanti sono le sue identificazioni come Pistoria, Pistoriae o Pistorium atte anche a indicare questo suo ruolo , ovvero Pistoria in Latino denota il forno usato per fare il pane.

A medieval city, which still preserves the identifying features of the time, even if its origins are well before and date back to the Roman period of the second century AD. It is presumed to have been a fortified center (oppidum) that served as a base for the legions.. Equally relevant are its identifications as Pistoria, Pistoriae or Pistorium also to indicate this role, i.e. Pistoria in Latin denotes the oven used to make bread.

La bottega dei pippi nasce dalla passione di un bambino ormai cresciuto, e dalla sua idea di valorizzare un prodotto tipico della tradizione Pistoiese: il Pippo di San Bartolomeo. Un biscotto che dal dopoguerra veniva realizzato in occasione della festa di San Bartolomeo del 24 Agosto, e sotto forma di “corona”, dove oltre ai “pippi” era arricchita di confetti pistoiesi ,caramelle e cioccolatini, veniva donato ai bimbi all'uscita della medesima chiesa dove venivano accompagnati per la benedizione dai genitori e dai nonni All’interno del nostro “piccolo mondo” portiamo avanti con determinazione ed entusiasmo la tradizione , con evoluzione e innovazione, proponendo anche varianti di gusto al tradizionale Pippo , affiancando ad esso le nostre varianti ai fichi e vin santo, castagnaccio, cioccolato e sale, sacker , e al tartufo, con l'intento di creare un “pippo” per ogni situazione e gusto dei nostri clienti . Riscontrando con piacere che si adatta perfettamente come base per creare dei dessert gustosi e innovativi come il TIRAMIPIPPO, lo STRUDEL, il PIPPOCHEESE ,oppure in abbinamento al gelato per l'estate Siamo una realtà nata in costante evoluzione , a dimostrazione che il nostro progetto è sfociato ben oltre le porte delle mura della nostra città raggiungendo con apprezzamento, abbiamo realtà importanti a Firenze e Roma, ed è solo l'inizio.

The Pippi shop was born from the passion of a grown up child, and from his idea of enhancing a typical product of the Pistoia tradition: the Pippo di San Bartolomeo.A biscuit that since the post-war period was made on the occasion of the feast of St. Bartholomew on August 24th, and in the form of a "crown", where in addition to the "pippi" it was enriched with Pistoia sugared almonds, candies and chocolates, it was given to children at the exit of the same church where they were accompanied for the blessing by their parents and grandparents. Within our "little world" we carry on the tradition with determination and enthusiasm, with evolution and innovation, also proposing flavor variants to the traditional Pippo, flanking it with our variants with figs and vin santo, chestnut, chocolate and salt, sacker, and truffle, with the intention of creating a "goofy" for every situation and taste of our customers. Di conseguenza noi abbiamo messo a disposizione per gli altri la nostra professionalità finché non abbiamo iniziato a sentir crescere in noi il desiderio di mettere a frutto le conoscenze, il pensiero della nostra personale idea di pasticceria e gelateria artigianale.

We are two professional pastry chefs and gelato makers with different stories that intertwine, first in life and then in our profession, at ALMA, the international cooking school, in 2015. Since then, we have never separated! We have supported each other through various work needs, and thanks to this, we have been able to meet many great personalities in both the culinary and pastry fields, who have been able to convey the knowledge and importance of offering a good quality product by knowing how to choose from regional excellences. Consequently, we have made our professionalism available to others until we started to feel a growing desire to put our knowledge to use, thinking of our personal idea of artisanal pastry and gelato.

Fortezza 59 nasce nel 2020 dall’unione di quattro giovani imprenditori che hanno voluto credere in un progetto di recupero e riqualificazione del parco intorno alla Fortezza Santa Barbara, restituendo alla città di Pistoia un luogo da sempre amato e vissuto.
“Ospitalità” e “Stare bene” sono le nostre parole d’ordine. Fino a tarda sera accogliamo la clientela nella nostra struttura immersa nel verde.

L’ispirazione della Fortezza nasce dall’amore per la città di Pistoia e dalla voglia di dare una nuova luce a uno dei suoi luoghi più magici, di aprirlo al mondo, di renderlo un piccolo sogno di buona compagnia, vitalità e ottima cucina.

Un locale immerso nel verde, a pochi passi dalla storia cittadina con la sua poderosa Fortezza. A place of goodness, where you can enjoy an aperitif pampered by one of our live music evenings, where you can taste the goodness of Tuscan cuisine or a high quality pizza, where you can organize a unique event. Fortezza 59 was born in 2020 from the union of four young entrepreneurs who wanted to believe in a project of recovery and redevelopment of the park around the Santa Barbara Fortress, giving back to the city of Pistoia a place that has always been loved and lived.
